When the rustic flavors of Hunan—such as stinky tofu and chili-fried pork—are reimagined in the form of noodles and pastries, a new chapter begins in the industrialization of regional cuisine. On August 28, 2026, the “Great ‘Xiang’ Achievements: ‘Noodle’ Toward the Future” 2027 Qiu’s Noodle & Pastry New Product Launch and Ordering Conference was held in Hunan. Distributors and food industry professionals from across the country gathered to engage in in-depth discussions on how Hunan-style noodles and pastries can transcend regional boundaries and expand into the national market.

This event is hosted by Hunan Qiushi Fresh-Frozen Food Technology Co., Ltd., a subsidiary of Xuedi Group. With more than two decades of experience in the frozen food industry, the company is now ramping up its efforts in the quick-frozen pastry segment, establishing a dual‑business model that spans both frozen desserts and pastries. Leveraging Hunan’s rich culinary resources, it transforms authentic Hunan flavors into standardized pastry products that can be distributed nationwide.

New Product Launch: Xiang Cuisine Flavors in a Pack, Breaking the Mold with Differentiation

At the launch event, several new pastries with strong regional identity took center stage. Products such as Chili‑Stirred Pork Buns, Stinky Tofu Buns, and Hunan‑Style Braised Meat Buns all made their debut, infusing familiar Hunan flavors into baked goods. Unlike most frozen pastries on the market, this line features carefully selected local ingredients from Hunan, with fillings prepared fresh in‑house to recreate the distinctive wok hei and layered flavors of Hunan cuisine. Balancing authentic taste with the convenience of frozen foods, these products suit a variety of settings—including home breakfasts, restaurant outlets, and wholesale distribution—offering a differentiated Hunan‑flavored solution in the fiercely competitive frozen pastry segment.

Technical Core: Standardized Sourdough + Quick-Frozen Raw Dough, Dual-Drive Approach

Targeting the industry, Qiu’s Bakery has unveiled two core technologies—industrial replication of sourdough fermentation and a terminal‑level innovation for quick‑frozen raw dough products. Among these, the industry‑first quick‑frozen raw dough technology stands out as the central highlight of this launch event.

Traditional sourdough fermentation relies on the experience of master bakers; even slight variations in temperature and duration can affect the flavor, making consistent mass production difficult. Qiu has transformed this process into a controllable industrial workflow, enabling standardized mass production while consistently delivering the distinctive wheat and yeasty aromas characteristic of sourdough.

The quick-frozen raw dough‑ball technology breaks the conventional “semi‑finished raw dough balls plus in‑store proofing” model. The factory handles 100% of the proofing, so outlets don’t need to thaw the product—just place it directly into the pot to serve, with zero technical skill required at the point of sale. The ingredients include only wheat flour, water, a fermentation starter, sugar, and baking soda, resulting in a clean, simple formula that avoids the texture degradation typical of cooked‑and‑frozen processes. After reheating, the crust is soft yet springy, closely replicating the taste and texture of freshly made dough. For foodservice operators, this eliminates the need to hire specialized dough‑making staff.

Channel endorsement: Dealers sampled the product on-site, resulting in multiple partnerships.

At the event, attending distributors sampled the new products on-site and engaged in in-depth discussions about product features and market implementation, reaching several cooperation agreements that underscore channel partners’ strong confidence in the market potential of Xiang-style specialty noodles.

Industry significance: Moving beyond price competition, regional flavors are emerging as a new growth driver.

The frozen food industry has moved beyond simple price competition, with regional flavors emerging as a key growth driver. Hunan cuisine enjoys widespread national recognition, yet many classic tastes still face hurdles in industrial-scale production. Turning local street‑food specialties into consistently high‑quality products suitable for nationwide distribution presents both an opportunity and a challenge for domestic food companies. Qiu’s Pastry’s launch of a new product lineup is not only a practical step toward industrializing Hunan‑style cuisine but also offers valuable insights for expanding regional specialty foods into broader markets.
